Zucchini Feta Cake

It's a moist and savoury delight that's as versatile as it is delicious!

Ingredients

  • 255 g flour
  • 1 pack baking powder
  • 1 pinch of sea salt
  • 2 eggs
  • 150 ml extra virgin olive oil
  • 185 g courgettes
  • 125 g feta
  • zest of half a lemon

Instructions

  • Preheat the oven to 180°
  • Grate the zucchini and set aside.
  • In a large bowl whisk together all the dry ingredients.
  • In another bowl mix the eggs and the olive oil until well combined.
  • Add the zucchini and the crumbled feta.
  • Now add the lemon zest and mix until you get an even mixture.
  • Finally add the dry ingredients and mix again for about half a minute.
  • Pour the batter into a cake pan and bake for around 50-60 minutes.
