Preheat the oven to 150° and line a sheet pan with parchment paper.
In a large bowl mix the butter and the sugar first until the mixture gets pale and fluffy .
Then add the egg and vanilla extract and mix again until you get an even dough.
In a separate bowl, whisk together the flour, salt and baking powder.
Combine everything in the large bowl, then fold in the white chocolate chips.
If you're not using store-bought chocolate chips, use good quality chocolate and chop it into little chunks.
Scoop the dough (with an ice-cream scoop) into balls and place onto the baking sheet.
Bake the cookies for 15-20 min.
