Preheat the oven to 175°
In a bowl, whisk together flour, baking powder, salt and chai spice mix.
In a separate bowl, cream butter, sugar, and icing sugar until fluffy.
Then add the egg and the vanilla extract and mix again.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
Line a baking tray with baking paper, then scoop dough onto the baking sheet spacing them evenly (9 scoops per tray)
Bake for 10-12 minutes until the edges are lightly golden.
Leave on baking tray for 10 minutes before transferring them onto wire rack.
Repeat until all the dough is used up.
