Last summer, I had the incredible opportunity to attend Taylor’s Eras Tour in Europe. Although I’d always been a casual fan with her songs sprinkled across my playlists, the concert prep turned me almost into a full-fledged Swiftie. Leading up to the big event, I dove deep into her discography, memorizing lyrics from her albums and her Eras Tour setlist. But it didn’t stop there. As a passionate baker, I couldn’t resist digging deeper—and my search led me to none other than Joy the Baker’s blog. Since the beginnings of the recipe, it has evolved several times I guess, but all the recipes I’ve found come down to the original version with just a few tweaks here and there.

All I can say for now is, that my colleagues were not disappointed I did!

While I stayed mostly true to the original, I made a few small adjustments. The allspice blend available at my local supermarket isn’t quite the same as what’s used in the U.S., so the flavor isn’t an exact replica. But make no mistake: this cozy, spiced cookie owes all its charm to Taylor Swift and Joy the Baker. I just added a pinch of pepper, to hit as close as possible.

Taylor Swift’s Chai Cookies

These chai sugar cookies are the perfect blend of cozy fall flavours, easy baking and a touch of Taylor Swift magic!
Servings 18 cookies

Ingredients
  

Cookies

  • 225 g butter
  • 200 g sugar
  • 50 g icing sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp chai spice mix

Icing

  • 130 g icing sugar
  • 30 ml milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp chai spice mix

Chai Spice

  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground all spice
  • 1 pinch pepper
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions
 

Cookies

  • Preheat the oven to 175°
  • In a bowl, whisk together flour, baking powder, salt and chai spice mix.
  • In a separate bowl, cream butter, sugar, and icing sugar until fluffy.
  • Then add the egg and the vanilla extract and mix again.
  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Line a baking tray with baking paper, then scoop dough onto the baking sheet spacing them evenly (9 scoops per tray)
  • Bake for 10-12 minutes until the edges are lightly golden.
  • Leave on baking tray for 10 minutes before transferring them onto wire rack.
  • Repeat until all the dough is used up.

Glaze

  • Whisk together icing sugar, milk, vanilla extract, and chai spice mix until smooth.
  • Drizzle over cooled cookies.

Chai Spice

  • Add all the spices to a little bowl, then mix until all the spices are well-combined.
  • Enjoy!!!
