The story behind this recipe is actually quite funny. One night, when coming home after work, I decided that I wanted to cook more regularly and find some quick and easy recipes. At the same time, I decided that it was time for another empty-the-fridge session and so I somehow looked to kill two birds with one stone (what a horrible expression).
I had pine nuts and spinach at home and googled what seasonal foods I could join to that. So I found a recipe with spinach and decided to add a bit more flavour such as garlic and maybe some raisins. At this time I was very much into sweet and savoury combos. So I went about my day with my recipe and afterwards told my Spanish friend what a super duper recipe I’ve just created, just to realise that it existed for decades in Catalonia. The world is a small village, and the same recipe inspirations happen all over the globe. But I still find it interesting that I’d come up with this exact Catalan spinach recipe.
Catalan Spinach
Ingredients
- 600 g spinach
- 4 tbsp olive oil
- 2 garlic cloves
- 100 g golden raisins
- 80 g pine nuts
Instructions
- Heat a little bit of water in a large pot over high heat.
- Add spinach, cover and cook just until wilted. Stir occasionally until the spinach is ready.
- Crush the garlic, then heat the olive oil in a large frying pan and add it. Fry until golden.
- Now add pine nuts and raisins. Wait until the pine nuts are golden and the raisins plumped.
- Bring the spinach to the frying pan and mix. Season with salt and pepper and you're good to go.
