There’s something almost magical about chocolate cookies. They’re the universal comfort food, capable of turning the most stressful day into a cozy moment of bliss. Whether you’re battling a bad mood, an unexpected deadline, or just a strong craving for something sweet, chocolate cookies always seem to have the answer.
Today tough, they’re more than just a dessert, they’re literally a lifesaver. For over 12 hours, the rain hasn’t stopped pouring, and Luxembourg feels like it’s slowly turning into a miniature Venice. The grey skies feel endless and staying dry feels like an impossible task. In moments like this, when the world outside feels heavy, warm giant chocolate cookies are my refuge.
As the rain patters against the windows, I pull out my mixing bowls and preheat the oven. Whisking everything together, the rich aroma of cocoa filling the kitchen and the comforting hum of the oven remind me that even in those chaotic moments, there are small joys we can create for ourselves.
In this post I’ll share my favourite foolproof crunchy giant chocolate cookie recipe. Because let’s face it: no situation is too big for a chocolate cookie (or two)

Giant Chocolate Cookies
Ingredients
- 250 g flour
- 50 g cacao powder
- 280 g sugar
- 1 tsp baking powder
- 1 pinch of salt
- 220 g butter
- 1 large egg
- 2 tbsp vanilla extract
Instructions
- Preheat the oven to 180°
- In a large bowl combine most of the dry ingredients such as flour, cacao, salt and baking powder.
- In another bowl, whisk together the sugar and half of the butter until you obtain a fluffy dough.
- Melt the other half of the butter and pour into the sugar-butter mixture.
- Now add the egg and the vanilla extract and mix again until you get an even dough. Then slowly pour in the flour-cacao mixture.
- Line a baking tray with a sheet of baking paper.
- With two tablespoons form medium-sized balls (diameter 6cm), which you then place onto the baking tray and slightly flatten them. Make sure to leave a distance of 10cm between them.
- Bake the cookies for 18 to 20 minutes.
